Aged puerh which takes longer time to develop its taste profile is even more precious. Puerh is divided into either raw or cooked one. They are different in terms of production and taste.
RAW PUERH
Raw puerh refers to the one left oxidized naturally over time after it has been sun-dried. It shows a pale-yellow liquor with a refreshing scent when it is young. Gradually, it will turn orange and the grassy aroma will diminish. The top-notched aged puerh brews a brownish-red liquor with a rich and smooth aftertaste.

Cooked puerh has been applied a special method, wodui, to shorten the aging process. We can enjoy it shortly after production. Unlike raw puerh which shows dynamic changes over time, cooked puerh is rather steady. It is often ruddy with a decent earthy scent.
